Sicilian Lemon Chicken
- 1 roasting chicken
- Salt and pepper
- 1-2 tablespoons butter
- 1 lemon, pricked around with fork
- Fresh parsley and
- Lemon slices or wedges
Preheat oven to 400°F. Wash and dry chicken. Salt and pepper cavity of chicken; place lemon inside cavity. Rub outside of chicken generously with butter. Truss chicken if desired. Sprinkle chicken generously with salt and pepper. Place chicken on a rack in roasting pan.
Roast 15 minutes at 400°F. Reduce heat to 250°F and continue roasting until chicken is done, about 4 hours (OR reduce heat to 350°F to reduce cooking time to about 1 hour; this will result in slightly less flavorful chicken). Serve on a bed of parsley and lemons.
