Oh, sun-dried tomatoes and cream — a party in your mouth! and oh, so satisfying!
Salsa di Panna e Secchi (Tomato and Cream Sauce)
- 6 sun-dried tomatoes (well drained if packed in oil;
- or soaked in boiling water for one minute then drained if dry-packed)
- 3 tablespoons butter
- 2 large cloves garlic
- 3/4 cup cream
- 1/2 teaspoon salt
- 8 ounces fettucini or other large pasta, cooked al dente
- freshly grated Parmesan cheese
Chop tomatoes, set aside. In large skillet over medium heat, melt butter, sauté garlic just until fragrant. Add cream, tomatoes and salt to skillet, heat until slightly thickened. Salt and pepper to taste. Toss with hot, cooked pasta, sprinkle liberally with fresh Parmesan. Serve immediately.
