What’s pink and red? Beautiful spring sunsets, strawberries, and pink wine! Yes, pink wine — it’s not that soda pop stuff anymore! My ‘go to’ rosé wines are not overly sweet, are well-balanced with acidity, and have bright, crisp flavors that pair well with … well, strawberries! Rosé wines are meant to be drunk young, and a new crop of them has just hit the market. Here are my faves for this spring: Treveri Sparkling Rosé, JM Cellars Rosé, Brian Carter Cellars Abbracadabra Rosé. And what do I serve with them? a colorful, flavorful version of an Italian caprese salad!
Insalata Caprese alla Primavera (Spring Caprese Salad)
- 1 pound fresh mozzarella
- 10 strawberries
- handful of fresh arugula
- 2 tablespoons dried cranberries
- 1 tablespoon balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- Salish Alderwood Smoked Salt coarse grain
- freshly ground black pepper to taste
Cut or tear mozzarella into chunks (I prefer chunks).
Arrange on four salad plates.
Thinly slice strawberries over cheese.
Scatter arugula on top; sprinkle with cranberries.
Drizzle with balsamic vinegar, then olive oil; season with salt and pepper.
Let stand 15 minutes before serving.

You can add raspberries as well.
