Pea Leaf & Mint Pesto
Pesto is paste and can be made from a wide variety of ingredients. Use this pesto as a garnish to kick the "green" flavor up in a host of recipes - think pea risotto.
Ingredients
- 2 green onions trimmed
- 1 cup pea leaves from pea tendril stalks
- ¼ cup fresh mint leaves
- 1 tablespoon freshly grated Parmesan cheese
- 1 tablespoon pine nuts
- 1 tablespoon olive oil
- Salt to taste
Instructions

Cut white part of green onion into 1-inch chunks. Cut the remaining green tops on a steep bias, set aside for garnish. Add the white parts of green onions to food processor bowl, along with pea leaves, mint, Parmesan cheese and pine nuts. Process until finely chopped. With machine running, gradually add olive oil, until spreadable consistency is reached. Season with salt.
