Semifreddo means “half cold” in Italian. Here it refers to the slushy mixture that brings texture and flavor to this classic champagne cocktail.
- 2 cup frozen peach slices
- ½ cup peach schnapps
- 2 bottles chilled Prosecco or sparkling white wine
- ¼ c superfine sugar
- 1 cup small ice cubes
- Reserve 8 peach slices for garnish. Blend remaining peaches, peach schnapps, 1 cup of the wine, the sugar and ice in blender until smooth. Pour ½ cup of slushy mixture into 8 glasses; top each off with remaining sparkling wine. Garnish with peach slice.
