We recently hosted a fabulous winemaker’s dinner with Juergen Grieb, winemaker and owner of Treveri Cellars in Wapato. His wines are magical, easily paired with food, and a great addition to the holiday season. The lime gelato recipe is mine — I like to cut the calories and give it a bit more zip with the buttermilk option. Juergen and I put our heads and taste buds to work, and developed this frothy, flavorful float. Enjoy, and “Here’s to you!” — Chef Carol
lime gelato floats
- 1 medium lemon
- 4 limes
- 1 cup sugar
- 2 1/2 cups COLD whipping cream (or 1 1/4 cups buttermilk + 1 1/4 cups cream)
- dash of salt
- 2-3 tablespoons lime vodka, optional
for serving (not as a float! But still a party in your mouth!):
- 1 lime, sliced into 6 wedges
- honey, for drizzling
- sea salt
Zest 2 of the limes. Add to the juice of all four limes plus juice of one lemon. Stir in the sugar, then the cream and salt. Add lime vodka if using. Chill at least 4 hours. Freeze in ice cream freezer.
Scoop gelato into flutes, pour Treveri Riesling over. Garnish with a lime wedge.
OR: Scoop into ice cream dishes. Squeeze lime juice over, drizzle with honey, sprinkle with sea salt.
Makes 6 to 8 servings.
