- zest of 1/2 lime
- juice of 2 limes
- 1/4 soy sauce
- 2 teaspoons rice vinegar
- 1 clove garlic, minced
- 1 teaspoon freshly grated ginger
- 2 teaspoons sugar
- dash red pepper flakes
- 1/4 cup oil, I like peanut, avocado or corneal here.
Whisk together the lime zest, juice, soy sauce, vinegar, garlic, ginger, sugar, pepper flakes. Slowly add oil. Makes about 1/2 cup dressing.
