So, you may ask, what do cooking school teachers and chefs do for fun? Well, we sometimes call it ‘research.‘ Yesterday we drove the back roads to Bellingham, partly for the journey, by mostly to visit a restaurant — Flats, located in the Historic Fairhaven district. We have been wanting to try it for sometime, and, well, it was most definitely worth the trip. The restaurant is in a lovely old building (as are most businesses in the Historic Fairhaven district), with a very reasonable wine list and a diverse menu.
Flats is definitely a new favorite, and I will return!
So, I thought it would be nice to include some photos of dinner — which was difficult, because, well, I was so excited to dive into the scrumptious fare. We devoured the Macarrones with white truffle oil. . . .
Yes, that’s how good it was! Followed by Prawns Sautéed in Spanish spices, an amazing Spanish omelet. . . .
A classic plate of Patatas Bravas – made with sweet potatoes, a fantastic twist and so-o-o-o flavorful, and some perfectly seared scallops on cannellini bean purée, with caramelized onions, allioli and pesto.
