quick quintessential peach crisp

Even though Autumn is in full swing here in the northwest, there are gorgeous peaches in the market. I love to make crisp — it’s comfort food to the MAX! This recipe is my version of my friend Julie Butler’s crisp. Try it with a scoop of buttermilk ice cream, mmmmMMMMM!

For filling:

6 cups fresh sliced & peeled peaches

¼ cup brown sugar

3 tablespoons flour

1 teaspoon fresh lemon juice

1 teaspoon fresh lemon zest

1 teaspoon cinnamon

For topping:

1 cup flour

1 cup sugar

1 teaspoon baking powder

¼ teaspoon salt

¼ teaspoon nutmeg

1 egg beaten

½ cup melted and cooled butter

Preheat oven to 375 °F.

Prepare filling: In a non-stick baking pan or greased casserole spread peach slices evenly, then sprinkle with the remaining filling ingredients.

Prepare the topping: Stir together the dry ingredients. Add the egg, and stir until it resembles coarse crumbs. Sprinkle over peach filling. Drizzle the melted butter evenly over the crisp topping.

Bake 35-45 minutes, until golden brown and bubbly. Allow crisp to cool 30 minutes before serving.

Serves 6-8. Happy Autumn!
